Muffins that stay moist and full of flavour days after baking is the magic of this apple muffins recipe. They make the best quick to grab and go snack to have with a coffee or cup of tea tea, or an after school treat for the kids.
Let me start off my saying that Chai is an often under-estimated flavour used in baking. The beauty of Chai is that it can be added to absolutely anything.
HOW TO MAKE APPLE MUFFINS
The secret these apple muffins staying moist is the addition of brown sugar and honey, plus using a combination of apple sauce with butter to give them moisture and the ultimate flavour boost! Brew 3 chai teabags in boiling water. You can use vanilla flavoured or whatever chai flavour you like. Coat apples in cinnamon, vanilla and brown sugar, then add in eggs, butter, apple sauce, honey and brewed tea. Squeeze all excess tea from the tea bag into the bowl and fold in dry ingredients. The batter smells gorgeous in the bowl!
OPTIONAL ADD-INS
You can customise these apple muffins to whatever your heart desires. Feel fee to add in 1 ½ to 2 cups of chocolate chips, nuts of your favourite kind, extra spices or additional dried fruit. This magical muffin batter is perfect to make it your own! To replace the apples with other types of fresh fruit, use the following for best results:
pears (peeled, cored and chopped) berries (blueberries, raspberries or blackberries) strawberries cut into quarters
Lightly spray two nonstick muffin tins with nonstick cooking oil spray and wipe over with a paper towel. Spoon about two heaping tablespoons of batter per muffin into lightly greased nonstick muffin pans.
These apple muffins are not only moist but super fluffy, soft and sweet. Beautiful tender apple pieces burst through every mouthful and hit any craving. Your kitchen will be filled with beautiful chai aromas!
