Mango Parfaits taste best when assembled just before eating with chilled yogurt. This helps preserve the granola’s crunch and the freshness of the cut mangoes. These parfaits are good to go and don’t need any other condiments.
How to Store
Mango Yogurt Parfaits can be made a day ahead of time and stored in a refrigerator, tightly covered. Store the mango yogurt and mango chunks in separate containers with airtight lids for best results. Layer the parfait with granola when ready to serve. I don’t recommend freezing these since the ingredients don’t stand up well to freezing.

I assembled these parfaits in Stemless Martini Glasses, but you can use any stylish cocktail glasses, or keep it simple and use these 8 oz mason jars.

You can easily customize this recipe to fit your needs. Here are some of the popular variations:
Vegan - substitute the Greek yogurt with cashew yogurt. Low-fat - Use low-fat or fat-free Greek yogurt. Granola: If you don’t have or like granola, substitute with muesli or your favorite cereal. You can also use High-Protein Granola.
