Like I said, at the heart of this sandwich is the Paneer Bhurji, a concoction of crumbled paneer (Indian cottage cheese) infused with a medley of spices and aromatics. Picture soft crumbled paneer mingling with finely chopped onions, tomatoes, green chilies, and a sprinkle of spices, lending warmth and depth to every bite. For this Paneer Bhurji Sandwich, crumbled paneer is sautéed with onions, tomatoes, spice powders and herbs. This can be done as per your liking. It is then stuffed inside the bread, and either toasted or grilled in an electric toaster or hand-held stove-top toaster. If you prefer sandwiches with a good filling inside, then you can also add some cheese and sliced veggies to make it fuller. With each bite, you experience a burst of flavors – the creamy richness of paneer, the tang of tomatoes, the crunch of onions, and the kick of spices, all embraced by the softness of bread. How to make Paneer Bhurji Sandwich

Preparation

  1. Keep all the ingredients ready for making paneer bhurji.
  2. Crumble 200 grams of paneer and set aside.

Sauté Onions

  1. Heat 1½ tablespoons butter or oil in a pan.
  2. Once the butter melts or the oil becomes hot, add ½ teaspoon cumin seeds.
  3. Lower the heat and sauté cumin seeds until they crackle.
  4. Now, add 2 teaspoons finely chopped ginger.
  5. Sauté the ginger on low heat for a minute or until the raw aroma of ginger disappears.
  6. Add ⅓ cup chopped onions and 1 to 2 finely chopped green chilies.
  7. Sauté until the onions turn translucent and are softened.
  8. Sprinkle salt as per taste.
  9. Stir and mix well.

Sauté Tomatoes

  1. Now, add ½ cup finely chopped tomatoes.
  2. Stir and sauté for a minute.
  3. Add ¼ teaspoon turmeric powder, ½ teaspoon red chili powder and ¼ teaspoon garam masala powder.
  4. Mix well.
  5. Sauté the onion-tomato masala on low to medium heat for 2 to 3 minutes or until the tomatoes soften.

Add Paneer

  1. Then, add the crumbled paneer.
  2. Stir and mix well. Cook on low heat for about 1 minute. Ensure you don’t overcook the paneer as it becomes dense and rubbery, if cooked for a longer time.
  3. Turn off the heat.
  4. Add 1 tablespoon chopped coriander leaves and mix well.
  5. Remove the paneer bhurji in a bowl and set aside. Allow it to cool or become warm at room temperature.

Assemble

  1. Slice the edges of the bread if you prefer. You can use any bread of your choice like White Bread or Brown Bread or Wheat Bread or Sandwich Bread.
  2. Apply a generous amount of butter on the bread slices.
  3. Add a spoonful of prepared paneer bhurji on the buttered bread slices. Spread the mixture evenly on all sides with the help of a spatula or back of a spoon. At this point you could also add some thinly sliced onion, capsicum, cucumber or tomato if you like.
  4. Cover with another slice of bread.

Toast Paneer Bhurji Sandwich

  1. Place the sandwiches in a preheated toaster or grill.
  2. Toast for 2 to 3 minutes or until they look golden brown and crisp. Similarly, toast or grill the rest of sandwiches.
  3. Slice the sandwiches, apply some butter if you like, over them.
