About Sesame Toast

This vegetarian Sesame Toast is simply a super snack or starter of crisp, golden fried toasts covered with a veggie filling and crunchy sesame. Basically, a dish oozing umaminess that can be easily replicated at home without any hassle. Usually, toast and sandwich recipes are my favorite because most of them are quick to prepare, super easy, yet pack a punch of flavors and are filling too. Such recipes are also much sought after by people who are usually short of time and want to make a quick breakfast or brunch meal. The array of vegetable and white sesame seeds in this Sesame Toast not only adds a lovely crunch and flavor to the dish, but also enhances the nutrition value. My choice of vegetables for this recipe includes carrot, potato, capsicum and French beans. However, you can add more or your preferred list of veggies as well. I have also added some celery to this recipe of Sesame Toast. But it is no hard and fast rule to incorporate it. If you don’t have celery handy at home and don’t even wish to purchase it, then just use some fresh coriander leaves instead. This too, makes the toasts, equally delish. This Sesame Toast makes for a really nice snack or breakfast option. One more way you can use these is to make them even smaller in size and serve as bite-sized starters in your house parties and get-togethers. It will pair amazingly with your mocktails and other beverages. You can prep the vegetables a night before and use it the next day to make these toasts. This way, it becomes all the more easy to finish preparing this dish for breakie, during the morning hours. I have shallow-fried the toasts instead of deep-frying. But you can choose too do so. While frying the Sesame Toast, you must keep in mind that you should always do that in medium hot oil. Or else, you can end up having toasts that have absorbed too much oil. Also, make sure that the veggie mixture has bound well with the cornstarch paste and sticks properly to the bread pieces. Otherwise, it can get separated while bring fried. I have also used Brown Bread for the toast base, to make it a little more wholesome. However, this Sesame Toast can be made with White Bread, Whole Wheat Bread or even multigrain bread. Since I have not yet tried making this recipe using an oven, I’m not really sure whether you could do so. Not only for breakfasts or parties, this crisp golden toasty snack is loved by kids as well.

How to make Sesame Toast

Prepare Veg Filling

1. Boil 1 medium potato. Parboil 1 small to medium carrot and 8 to 10 French beans in a steamer or pressure cooker. You can also steam the veggies in an instant pot adding water as required. I added everything in an electric steamer and removed the carrots and beans when they were half cooked. 2. Finely chop the parboiled carrots and beans. Also finely chop 1 small capsicum, 1 small piece of celery and 1 small to medium-sized onion. Peel and mash the potato as well. 3. Mix the mashed potatoes, finely chopped carrots, beans, capsicum, onions, celery in a bowl. Also add the following ingredients:

1 inch finely chopped ginger2 to 3 finely chopped small to medium-sized garlic cloves1 finely copped green chili1 tablespoon cornstarch½ tablespoon soy saucesalt as requiredblack pepper as required

Also make a separate paste of 3 tablespoons cornstarch in another bowl or cup. 4. Stir and mix really well. Let the mixture cool completely.

Make Sesame Toast

5. Cut 4 to 5 bread slices into rectangular, triangular, small shaped squares or even round shape with a biscuit cutter. Spread the prepared filling evenly.  Press it lightly so that the filling sticks to the bread. You can also first spread cornflour paste on the bread and then spread the veggie filling. 6. Then, apply the cornstarch paste on it. 7. Sprinkle white sesame seeds liberally over the cornstarch paste. Press lightly so that they don’t fall off. 8. Heat oil for shallow frying or deep frying. Slide the bread pieces in medium hot oil upside down and fry till golden. 9. Turn over carefully with a spatula and fry the other side. 10. Since bread absorbs a lot of oil, fry the bead pieces in medium hot oil till golden. 11. Place the Sesame Toast on kitchen paper towels to remove excess oil. 12. Serve veg Sesame Toast hot with tomato sauce or chili sauce.
