Sriracha mayo is one of those condiments that has, what you would call, a cult following. It’s found on just about every restaurant menu that involves sushi, fried fish, tacos, burgers and fries. You can find it in most grocery stores in the condiments aisle due to its overwhelming popularity.

But what if I were to tell you this wildly popular condiment can be made at home and it tastes 10x better? You heard that right. All you need is mayonnaise and the popular Asian chile sauce Sriracha, along with a few flavor enhancers. That’s it. Get ready to meet the sauce of your dreams.

This sriracha mayo takes plain white mayonnaise and adds a touch of mild, fruity heat to reach the same cult-worthy satisfaction. I make this recipe any chance I get because:

What is Sriracha?

Before we dive into the recipe, let me introduce you to one of the star ingredients - Sriracha. Sriracha is a type of hot sauce or chili-garlic sauce made from a paste of sun-ripened chili peppers, vinegar, garlic, sugar and salt. Its taste is spicy, tangy and sweet with a consistency thicker than Tabasco but thinner than ketchup.

The main components are mayo and Sriracha. Once you have those ready, all you need is an acid, salt and liquid sweetener.

Mayo: A full-fat, good-quality mayo works best. I love Best Foods, which is also known as Hellmann’s for those East of the Mississippi. 🙂Sriracha: I love to use Lee Kum Kee brand, which has the added bonus of fish extract. But feel free to use your favorite brand. To increase spice level, add 1-2 teaspoons more. To make it mild, reduce it in half. Sambal oelek, Cholula, Tapatio and Louisiana’s Tabasco sauce are all great alternatives. The end results may differ depending on spice level and consistency of your hot sauce, so feel free to adjust to your liking. Acid: Lime juice, lemon juice or apple cider vinegar are all great options. The citrus juice will give a sharper note whereas the apple cider vinegar is a touch sweeter. Feel free to add more or less acid to suit your tastebuds.Sweetener: The liquid sweetener is optional. Its main purpose is to tame down sriracha’s spicy bite. Agave is a straightforward sweetness, whereas honey adds a subtle floral flavor. To make the sauce sweeter, double the agave or honey.

How to Make Sriracha Mayo

All it takes is one bowl, one spoon and one step to spicy, creamy goodness every time. Mix mayonnaise, sriracha, lime juice, salt and agave, if using, till it becomes a smooth mix. Check the taste and adjust to your liking. Refrigerate the sauce till ready to use.

Uses & Serving Suggestions - What Is Sriracha Mayo Good On?

Get ready to be amazed by the versatility of this spicy sauce. Just like fry sauce (a combo of mayo and ketchup), Sriracha mayo is best served on anything the two main components (mayo and Sriracha) would be good on. My family’s favorite is slathered on Taco Burgers, but feel free to try it as:

Spread on Masala Chicken Burgers, Veggie Burgers or Quinoa Veggie Burgers Sauce for Fish Tacos, Chicken Tinga Tacos or Easy Chicken FajitasDip for fresh-cut vegetables, Bombay Potatoes or French Fries

Variations to Try

This sauce is a wonderful base recipe that can be enhanced with a simple addition of one or two ingredients. Once you have mastered your chili-mayo skills, add 1-2 teaspoons of any of the following:

Minced garlic, onion or dill pickles (Note: For best results, refrigerate this mixture at least a few hours before serving to allow the flavors to marry.)Soy sauce (regular or dark) - Perfect for Asian-flavored slawMustard (Dijon or whole grain) - Great for sandwichesFresh herbs, such as cilantro, mint or parsleyOr, just a pinch of crushed red pepper or cracked black pepper, for extra spice

How To Store Sriracha Mayonnaise

The sauce can be served immediately upon mixing, but the flavors get better the longer they sit together. I like to mix this sauce just before I start making dinner and set-it in the fridge until ready to serve (which is usually 30 minutes or so). That being said, it will keep for up to 4 days stored in an airtight container in the fridge.

Recipe Tips & Notes:

Use sriracha or your favorite chile sauce. I love the flavor and heat level of Lee Kum Kee Sriracha, but use your preferred brand (some are spicier than others). Alternatively, sambal oelek, Cholula, Tapatio, Louisiana’s Tabasco sauce or any hot sauce you have on hand will do.Customize to your liking: This ratio of mayo-to-sriracha creates a sauce that is medium-spice level. Add more or less depending on if you like it mild or spicy. To make it spicier, add 1-2 teaspoons more of sriracha. Make it mild by reducing the sriracha in half. To make it sweeter, double the agave or honey.Serve immediately or make-ahead. The spicy mayo can be served right upon mixing, but the flavors get better the longer they sit together. If adding minced garlic or onion (as in the variations above), prep at least a few hours ahead of time to take the raw bite away from the aromatics.Store in an airtight container in the fridge. The sauce will keep for up to 4 days.
